Most nonstick pans use PTFE, a type of PFAS, to stop food from sticking. Colorado, Connecticut, Maine and Vermont now restrict or require labels for PFAS in cookware, and many home cooks are looking for pans without it. The good news: you do not need a whole new kitchen. Four materials cover almost everything you cook: cast iron, carbon steel, stainless steel and ceramic-coated pans.

Below we explain how each material works, then compare six of the most popular PFAS-free pans on Amazon so you can pick the right one for how you cook.

How to choose a non-toxic pan

  • Want zero coating? Choose cast iron, carbon steel or stainless steel. Nothing on the surface can chip or wear off.
  • Cook a lot of eggs? A ceramic-coated pan is the easiest switch from Teflon. Keep the heat low to medium.
  • Have an induction cooktop? Cast iron, carbon steel and most tri-ply stainless work. Check ceramic pans first, since some do not.
  • Weight matters? Carbon steel and Tramontina stainless are much lighter than cast iron.
  • Look for clear claims. “PFOA-free” alone is not enough. Look for “PFAS-free” or “PTFE-free” on coated pans.

FAQ

Is ceramic nonstick really PFAS-free?

Ceramic coatings are made without PTFE, and brands like GreenPan and Caraway say their coatings are free of PFAS. The trade-off is durability: ceramic loses its slickness faster than bare metal pans, especially at high heat.

Is cast iron safe to cook with?

Yes. Cast iron has no synthetic coating. The seasoning is just oil that has been heated until it bonds to the iron. It is one of the oldest and most durable types of cookware.

Why does food stick to my stainless steel pan?

Usually the pan is not hot enough, or there is not enough oil. Preheat the pan for 1 to 2 minutes, add oil, then add food. Let meat release on its own before flipping.

Which pan should I buy first?

For most people, a 10 to 12-inch cast iron skillet or a tri-ply stainless pan. Add a ceramic pan later if you cook a lot of eggs.
